    In the Kitchen: Chocolate Pudding

    In the mood for a sweet treat? This chocolate pudding by Food Coach rocks, and is healthy to boot! Each serving is about 250 calories and loaded with healthy fat, vitamins and minerals. Enjoy!

    INGREDIENTS

    • 1x avocado, peeled and chopped
    • 3 tbl raw cacao powder
    • 1 tbl coconut butter
    • 2 tbl coconut milk
    • 3 tbl coconut sugar or agave
    • pinch Himalayan salt
    • pinch cayenne pepper (optional)
    • To serve - 2 tbl coconut flakes & 1 tsp raw cacao powder
    DIRECTIONS
    Put all ingredients in a powerful blender such as a Vitamix and blend for 2 minutes. Add more coconut milk if pudding is too thick.

    Serve in a mini-bowl topped with raw cacao powder and coconut flakes lightly toasted in a cast iron skillet.

    Serves 2
